PROFESSOR STINE MARIE ULVEN | USE OF DIETARY INTERVENTION STUDIES TO UNDERSTAND THE IMPACT OF DIETARY FAT ON HUMAN HEALTH

On October 11, we had the privilege of hosting Prof. Stine Marie Ulven, head of the Nutrition Department at the University of Oslo and coordinator of the MSCA NUTRIOME network, for our latest Open Seminar in the WELCOME2 ERA Chair project. She delivered a presentation on “Use of Dietary Intervention Studies to Understand the Impact of Dietary Fat on Human Health”. 

We explored the critical role of fatty acids in health and the learnt findings from dietary intervention studies, focusing on how replacing saturated fat with omega-6 fatty acids can influence cardiovascular disease risk markers. Additionally, we learned about the significant variations in triglyceride responses after omega-3 polyunsaturated fatty acid interventions.
